Blueberry Muffins

* 1/2  cup butter
* ¾ cup sugar
* 1 egg beaten lightly
* 1 cup milk
* 2 level cups flour
* 4 level teaspoons baking powder
* ½ teaspoon salt
* 1 cup blueberries

“Cream butter and sugar. Add fruit and egg, then milk and flour sifted with baking powder and salt. Bake in muffin tins at 375 for 15-20 minutes”

Funnel Cakes

How to make Funnel Cakes.

*3 eggs
* 2 cups milk
* ¼ cup sugar
* 3 to 4 cups flour
* ½ tsp. salt
* 2 tsps. baking powder

Beat eggs and add sugar and milk. Sift half the flour, salt and baking powder together and add to milk and egg mixture. Beat the batter smooth and add only as much more flour as needed. Batter should be thin enough to run thru a funnel. Drop from funnel into deep, hot fat (375-f). Quick Coffee Cake

How to make quick coffee cake.

* 2¼ cups flour, sifted
* 1 cup milk
* 3½ tsp. baking powder
* 1 tsp. salt
* ? cup shortening
* ? cup sugar
* 1 egg

Sift together flour, baking powder and salt. Cream shortening and sugar beating until fluffy. Add egg, beat well and then the milk. Add the flour mixture, stirring just enough to moisten. Turn into greased 8 inch square baking pan. Top with:

Apple Sauce Cake

How to make apple sauce cake.

* 1 cup light brown sugar
* ¼ cup butter
* 1 cup apple sauce
* 1 tsp. soda
* 2 cups flour
* 1 tsp. cinnamon
* ½ tsp. cloves, ground
* a little nutmeg
* 1 cup raisins
* pinch of salt

Cream together butter, sugar and spices. Add apple sauce, flour and soda dissolved in a little warm water. Add the raisins (or currants). Beat thoroughly and pour into a loaf tin. Bake in moderate oven (350-f) for approximately 50 minutes.

Christmas Butter Cookies

Ingredients

* 1 cup soft butter
* ½ cup brown sugar, packed
* 2¼ cups flour, sifted

Method

Cream butter until it resembles whipped cream and slowly add the sugar, beating well. Add flour gradually and blend thoroughly. Wrap in waxed paper and chill for several hours. Knead dough slightly on floured board, form into a smooth ball. Roll to about ? inch thick and cut to desired shapes. Johnny Cake

Johnny Cake Ingredients:

* 1½ cups yellow corn meal
* ¾ cup flour, sifted”
* 1½ tsp. baking powder
* ¾ tsp. baking soda
* 1 tsp. salt
* 2 tblsp. sugar
* 2 eggs, beaten
* 1¼ cups sour milk or buttermilk
* ¼ cup shortening, melted

Chocolate Cake

Coffee Walnut Cake

Friends were coming over for a late afternoon garden get together.  They were bringing most of the food but it was my job to make the dessert.  It was too warm and I didn’t feel like doing anything major but it HAD to be GOOD and for me, it had to be light and more-ish!

Looking through my recipes, I found all sorts of things that took too much time or that needed umpteen steps before I’d be finished – I didn’t have the time or the energy for all of  that.  I also found lots of desserts that looked great but would weigh you down after eating lots of barbequed whatevers and potato salad, etc.

Time was getting short and I had to come up with something – but what?  Then I found it – a coffee and walnut layer cake with coffee butter cream icing – in amongst recipes I’d been collecting for years. Continue reading

Is there anyone who doesn’t love the light and fluffy texture of a sponge cake. Sponge cake is one of the original country recipes.
